Monday was the first day of fall that I've had frost on the car windows. I had to dig in the trunk for my scraper. I don't mind too much. I love fall & winter. I love sweater weather, hats & scarves & chunky boots. Good apples, hot cocoa, snuggling under a blanket with my sweetie.
Come February, I may have other feelings about the weather, but for now it is good.
I did some cooking this weekend -- like, real cooking. Amazing! I made Mom Walsh's chicken casserole thing. I forgot to buy croutons, but I added cauliflower for vitamin power. I baked chocolate chocolate chip muffins. I made a pizza almost from scratch, except I bought frozen dough. The key is to portion these things out so that they last me all week. I have 3 major slices of pizza left (I could cut them into 4 or 5 slices), and 2 or 3 helpings of the chicken casserole. Makes for easy dinners when I have to get to class on time!
